1. Chocolate Tart

Ingredients:

For the crust:

  • 1 cup almonds
  • 2 tablespoons coconut oil
  • splash agave nectar
  • 2 to 3 soaked dates
  • 1 tablespoon cacao powder

For the filling:

  • 1 and 1/2 cups soaked cashews
  • 1/2 cup and 2 tablespoons water
  • 1/2 cup and 2 tablespoons agave nectar
  • 1/2 cup coconut oil
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon Himalayan pink salt
  • 1 cup raw cacao powder
  • 2 tablespoons carob powder
  • handful goji berries

Instructions:

For the crust:

1. In blender, add nuts and blend.

2. Add remaining ingredients and blend.

3. Pour mixture into a container, press into desired shape and refrigerate or freeze.

For the filling:

1. In blender, add all ingredients and blend until smooth.

2. If mixture is too thick, add some more water. Pour mixture onto crust.

3. Freeze for at least 3 hours.

Ingredients for 10 to 12 servings:

For strawberry layer:

  • 1/4 cup cashew butter
  • 1 teaspoon vanilla extract
  • 2 cups hulled strawberries
  • 1/2 tablespoon lemon juice
  • 3 packets Stevia
  • dash of salt

For banana cream layer:

  • 3 bananas
  • 1 teaspoon vanilla extract
  • dash cinnamon
  • 3 packets Stevia
  • 1/4 cup coconut milk
  • 3 tablespoons shredded coconut

For chocolate layer:

  • 1 cup pumpkin puree
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon agave, maple syrup or honey
  • 1/2 cup peanut butter
  • 2 tablespoons almond milk

Instructions:

1. In food processor, add ingredients for each layer at a time, blend and set aside.

2. In popsicle mold, add each layer as desired.

3. Freeze for at least 6 hours.

3. Peanut Butter and Jelly Ice Cream

Ingredients:

  • 3/4 cup strawberry sauce (ingredients below)
  • 2 cups full-fat coconut milk
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • 1 cup chopped frozen strawberries
  • 1/2 heaping cup smooth sunflower seed butter
  • 1 tablespoon coconut sugar

For strawberry sauce:

  • 1/2 cup packed dates
  • 3 cups frozen strawberries
  • 1 teaspoon lemon juice

Instructions:

For strawberry sauce:

1. In pot, add ingredients and let cook over medium heat until strawberries are soft and juices have released. Reduce heat if too hot or boiling.

2. In blender, add mixture and blend until smooth.

3. In bowl, add mixture and refrigerate until cool.

For ice cream:

1. In blender, add coconut milk, strawberry sauce, egg yolks, vanilla and salt and blend until smooth.

2. In ice cream maker, pour mixture and churn according to ice cream maker instructions until mixture is thick.

3. Add strawberries.

4. In bowl, add butter and coconut sugar, mix and let cool to room temperature.

5. When ice cream is churned, pour a layer into a container and drizzle with butter mixture. Repeat with more layers and end with layer of ice cream. With a butter knife, swirl ice cream.

6. Freeze for 1 to 2 hours.

4. Carrot Coconut Truffles

 

 

Ingredients:

  • 1 cup peeled and shredded carrot
  • 1 cup walnuts
  • 1 cup sunflower seeds
  • 3/4 cup dates
  • 1/2 cup raisins
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoons apple cider vinegar
  • pinch sea salt
  • 3/4 cup shredded coconut

Instructions:

1. In blender, add ingredients, except carrots and coconut, and blend until no large chunks remain.

2. In bowl, add mixture and carrots and combine.

3. Form dough into balls and roll in coconut to coat.

4. On lined baking sheet, place balls and refrigerate until cool.

5. Peanut Butter Pie

Ingredients for 12 servings:

For crust:

  • 1 cup rolled oats
  • 1 tablespoon cocoa powder
  • 3 to 4 tablespoons maple syrup or almond milk
  • 1 cup almond flour

For filling:

  • 2 cups organic peanut butter
  • 3 large ripe bananas
  • 2 teaspoons vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil

For topping:

  • 1/3 cup roasted salted peanuts
  • 1/3 cup dark chocolate chips
  • 2 tablespoons coconut oil

Instructions:

1. In 9-inch round cake pan, place parchment paper.

2. In food processor, add crust ingredients and process until smooth.

3. Add mixture to cake pan and press into shape.

4. In food processor, add filling ingredients and pulse until smooth.

5. Add filling onto crust and freeze for at least 4 to 6 hours or until solid.

6. For serving, sprinkle with peanuts.

7. In plate, add chocolate chips and coconut oil. Microwave for 30 seconds, stir, and repeat until chocolate is melted.

8. Add chocolate mixture onto pie.

6. Chocolate Protein Cake

Ingredients for 2 servings:

  • 1/4 cup hemp protein powder
  • 1 cup coconut flour
  • 1 and 1/4 cup coconut milk
  • 3 tablespoons cocoa powder
  • 2 tablespoons Stevia
  • 3 tablespoons liquid coconut oil

Instructions:

1. In blender, add ingredints and blend.

2. In each cup, with spoon, add mixture and press firmly. Refrigerate for 3 to 4 hours or until firm.

3. In hot water, place cups half-way for 10 seconds.

4. With knife, separate cake from edges of cup, place a plate over serving cup and turn over.

5. If cake doesn’t come out, repeat steps 3 and 4.

Ingredients for 6 servings:

For crust:

  • 1/2 cup raw nuts or seeds
  • 1/2 cup unsweetened shredded coconut flakes
  • 4 pitted dates
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter, ghee or coconut oil

For fruit filling:

  • 2 cups fresh or frozen fruit
  • 2 tablespoons lemon juice

Ingredients for 2 servings:

  • 10.6 ounces Greek vanilla yogurt
  • 1 cup blueberries, raspberries and sliced strawberries
  • 1 cup granola mix
  • 2 tablespoons unsweetened and toasted flaked coconut

Instructions:

1. In each dish, add 1/4 yogurt. Top with 1/4 cup berries and 1/4 cup granola.

2. Repeat with remaining yogurt, berries and granola.

3. Sprinkle with coconut.

9. Caramel Apple Pie

Ingredients for 8 servings:

  • 6 to 18 pitted Medjool dates
  • 1 and 1/2 cups walnuts
  • 3 medium peeled and chopped apples
  • 1 cup water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt

Instructions:

For crust:

1. In 8-inch tart pan, place parchment paper and set aside.

2. In food processor, add walnuts and blend until smooth. Add 8 to 10 dates and process for 20 to 30 seconds or until dates start to blend and combine.

3. In tart pan, add dough and press. Cover with plastic and freeze.

For filling:

1. In bowl, add remaining dates and water until covered and soak for 10 to 15 minutes. Drain.

2. In blender, add dates, water, cinnamon and salt and blend for around 15 to 20 seconds or until smooth.

3. In bowl, add apples and dates mixture and combine.

4. Pour mixture onto crust and freeze for at least 45 minutes.

10. Watermelon Slushie

Ingredients for 1 serving:

  • 2 tablespoons dried boba tapioca pearls
  • 1/4 cup frozen pineapple chunks
  • 2 tablespoons cold coconut water or sparkling water
  • 12 fresh mint leaves
  • 2 cups cubed seedless frozen watermelon
  • 1 lime’s juice
  • 1 teaspoon agave, maple syrup or honey

Instructions:

1. In pot, add 1 cup of water and bring to a boil. Add pearls and stir until they start to float. Simmer over medium heat for around 15 minutes or until tender. Remove from heat, cover and let sit for 15 minutes. Rinse with cold water, drain and set aside.

2. In blender, add pineapple, coconut/sparkling water and mint and puree until smooth. Pour into glass.

3. In blender, add watermelon and lime juice and blend until slush. Add boba and stir. With spoon, place watermelon mixture in glass over pineapple mixture.

11. Chocolate Peanut Butter Avocado Pudding

Ingredients for 6 servings:

  • 1 and 1/2 ripe avocados
  • 1 large ripe banana
  • 1/2 cup cacao powder
  • 1/2 cup peanut butter

  • 1/4 cup milk

  • 1 large quartered beet
  • 1 frozen banana
  • 3 tablespoons cacao powder
  • 1 cup almond milk
  • 2 cups spinach

Ingredients for 30 servings:

  • 2 and 1/2 cups chocolate chips

1. In crock pot, add chocolate chips, coconut milk, vanilla extract, salt and Stevia and stir. Cover and cook on low for 2 hours. Uncover and let sit for 30 minutes to 1 hour.

2. Stir for 5 minutes or until smooth.

3. In a casserole dish lined with parchment paper, spread mixture and refrigerate for 30 minutes or until firm.

14. Watermelon and Feta with Cream Dip

Ingredients for 6 servings:

  • 2 cups watermelon cubes
  • 1 cup mint leaves
  • 8 ounces feta cubes

For cream dip:

  • 1 cup plain non-fat Greek yogurt
  • 8 ounces soft Greek yogurt cream cheese
  • 1/4 teaspoon salt
  • 1 tablespoon lime juice
  • 1/2 teaspoon pure stevia extract

Instructions:

1. On skewers, add 1 watermelon cube, 1 piece of mint, 1 feta cube and repeat. Finish with 1 watermelon cube.

2. In a blender, add cream cheese and blend until smooth. Add remaining ingredients and blend until smooth.

Ingredients for 8 servings:

For crust:

  • 1 cup dates
  • 1/2 cup almonds

For cashew cake:

  • 2 cups soaked (2 hours) cashews
  • 1 peeled and sliced beet

  • 2 tablespoon lemon juice
  • 2 tablespoons water

Instructions:

1. In blender, add crust ingredients and blend until smooth. In 6 to 7-inch round pan, spread mixture.

2. In blender, add cashew cake ingredients and blend until smooth. Add mixture onto crust and refrigerate for 8 hours.
