1. Banana Bread

Ingredients for 10 slices:

  • 3 medium ripe bananas
  • 2 cups old-fashioned rolled oats
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1 teaspoon baking soda


  1. Preheat oven to 350 degrees Fahrenheit. Grease loaf pan lightly.
  2. In a blender, add ingredients and blend until smooth.
  3. Pour mixture into loaf pan and garnish with thin banana slices.
  4. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  5. Let cool in the loaf pan before serving.



2. Peanut Butter Date Cookies

Ingredients for 12 cookies:

  • 1 cup peanut butter
  • 1 cup pitted dates
  • 1 teaspoon vanilla extract
  • 1 large egg


  1. Preheat oven to 350 degrees Fahrenheit. Prepare cookie sheet.
  2. In a food processor, add dates and process until dates are broken down into small pieces.
  3. Add peanut butter, vanilla, and egg. Blend until mixture forms a ball.
  4. Scoop out the mixture. Roll into balls and press to make them flat.
  5. With a fork, press cookies to form criss-cross design on top.
  6. Bake for 10 minutes.



3. Berries Orange Popsicles

Ingredients for 6 popsicles:

  • 500 milliliters fresh orange juice
  • 70 grams blueberries
  • 8 strawberries


  1. In molds, add blueberries and strawberries.
  2. Pour juice until it just covers fruits.
  3. Freeze for at least 4 hours or until solid.



4. Chia Seed Pudding

Ingredients for 2 to 3 servings:

  • 1 cup full-fat coconut cream
  • 1/4 cup coconut water
  • 2 tablespoons chia seeds
  • 2 teaspoons honey
  • 1 teaspoon vanilla extract


  1. In a bowl, add ingredients. Mix until combined.
  2. Cover with plastic wrap. Refrigerate overnight.
  3. Garnish with fresh fruits or nuts.



5. Chocolate Lava Cake

Ingredients for 2 servings:

  • 55 grams dark chocolate
  • 1 tablespoon almond flour
  • 2 ounces butter
  • 2 eggs
  • 2 tablespoons powdered sweetener


  1. Preheat oven to 350 degrees Fahrenheit. Grease 2 ramekins with butter.
  2. In a pan, add butter and chocolate. Mix and melt over low heat.
  3. In a bowl, add chocolate and butter mixture, egg, almond flour, and sweetener. Mix until mixture becomes dough-like and is pourable.
  4. Pour mixture into 2 ramekins.
  5. Bake for 9 minutes or until the top of the cake is set but jiggles.
  6. Turn cake upside down onto a plate. Sprinkle with powdered sweetener and pomegranate seeds or raspberries. Garnish with mint leaf.
